summer salad


summer is coming to an end. but the tomatoes are still in season....
before going vegan, i loved mozzarella cheese, and it went perfectly with tomatoes and basil, known as a caprese salad. nowadays, i eat a lot of avocados and i find they replace the cheese quite well.

new "caprese" salad

what you'll need:
1 large heirloom tomato
1/2 an avocado
3-4 leaves of basil
fresh cracked black pepper

slice the tomato and arrange on plate. slice the avocado similar to the tomato, and either add them between the tomato slices or in a pile in the middle. chiffonade the basil leaves (pile them on top of each other, roll them up lengthwise, and slice to make ribbons), and top with black pepper to taste.

breakfast

banana nut breakfast cereal


what you'll need (1 serving):
  • 1 banana
  • 2 dates, pitted
  • 6-8 pecan halves
  • homemade almond or coconut milk
  • optional berries
just chop everything up and pour on your milk of choice.
